Fredriksbergin taloon, Helsingin Konepajan alueelle, avataan elokuussa 2022 ravintola, jota johtaa pitkän kansainvälisen uran tehnyt kokki Sauli Kemppainen.
Kemppainen on jo aloittanut uuden ravintolan suunnittelun: konseptin suunnittelu, avainhenkilöiden kiinnittäminen ja muut valmistelut ovat hyvässä vauhdissa.
"Nyt on aika katsoa eteenpäin"
Berliinistä vuoden 2021 alussa koronan takia Suomeen palannut Kemppainen on kuluvan vuoden aikana tehnyt erilaisia projekteja, mutta keskittyy nyt pelkästään tulevaan ravintolaansa.
Useissa fine dining -ravintoloissa vaikuttanut Kemppainen on luotsannut kuluvan aikana muun muassa Bad-lounasravintoloita, jotka hän otti haltuun ystävänsä, huipukokki Matti Jämsenin kuoltua lokakuussa 2020.
”Korona on sotkenut minunkin elämääni sekä Berliinissä että täällä Suomessa, mutta nyt on aika katsoa eteenpäin ja ottaa uusi askel. Olen todella innoissani päästessäni toteuttamaan visiotani”, Kemppainen tiedottaa.
Laadultaan ja hintatasoltaan helposti lähestyttävä
Ravintolastaan Kemppainen tekee aamusta iltamyöhään palvelevan ravintolan, jonka ytimessä on hänelle ominainen laadukas ja suurella sydämellä tehty ruoka.
”Haluan ravintolasta mutkattoman, laadukkaan sekä hintatasoltaan helposti lähestyttävän. Tärkeintä on aina kokonaisuus: panostamme henkilökuntaan, palveluun ja tunnelmaan. Haluan, että ravintolassani viihdytään."
Elokuussa avautuvassa uutuusravintolassa Kemppaisen vahva intohimoa ruoanlaittoa kohtaan tulee olemaan vahvasti läsnä.
"Sama intohimo, jolla olen keittänyt aina, tulee näkymään uudessa ravintolassa, kylläkin uusilla twisteillä maustettuna", Kemppainen kertoo.

Menu on Kemppaisen mukaan jo niin sanotusti kypsymisvaiheessa, ja kaikkea uutta asiakkaiden päiden menoksi on jo kehitelty.
”Siihen liittyen suunnittelen pientä yllätystä: ruokakonseptia, jollaista Suomessa ei ole totuttu näkemään”, Kemppainen paljastaa.
Ravintolan omistaa valtakunnallisesti yli 30:ssä ravintolassa sekä tapahtumatalossa toimiva Kanresta Oy, joka toimii taustalla Kemppaisen johtaessa sekä kehittäessä ravintolaa itsenäisesti.
